Ses caract\u00e9ristiques chimiques, les plus complexes de toutes les vitamines, sont uniques pour deux raisons. C\u2019est la seule vitamine ayant un compos\u00e9 min\u00e9ral et aussi l\u2019une des seules substances essentielles dans l\u2019organisme \u00e0 contenir du cobalt.<\/p>\n<p>La vitamine B12\u00a0est une coenzyme, ce qui veut dire que sa fonction est li\u00e9e de pr\u00e8s (et essentielle) \u00e0 l\u2019activit\u00e9 d\u2019une ou plusieurs enzymes. Ainsi, les carences en vitamines B12 sont souvent per\u00e7ues \u00e0 tort comme des carences en acide folique \u00e0 la fois dans les tests en laboratoire et dans les analyses de sympt\u00f4mes cliniques.<\/p>\n<p>L\u2019absorption de la vitamine B12\u00a0est un processus qui comprend plusieurs \u00e9tapes, et une anomalie dans l\u2019un des syst\u00e8mes enzymatiques n\u00e9cessaires \u00e0 l\u2019\u00e9mission, au transport et \u00e0 l\u2019absorption de la vitamine B12\u00a0peut conduire \u00e0 une carence. Les carences peuvent aussi \u00eatre caus\u00e9es par un apport inad\u00e9quat en vitamine B12 par l\u2019alimentation. Les sources alimentaires typiques comprennent donc la viande et les produits \u00e0 base de viande, et dans une moindre mesure le lait et les produits laitiers. Les v\u00e9g\u00e9tariens stricts (y compris les v\u00e9g\u00e9taliens) peuvent pr\u00e9senter une carence en vitamine B12 puisque leur alimentation n\u2019en fournit pas, sauf si leur nourriture est contamin\u00e9e par des microorganismes.
