Kilo pour kilo, l\u2019enfant a des besoins en prot\u00e9ines sensiblement plus \u00e9lev\u00e9s que ceux de l\u2019adulte.<\/p>\n<p>Il est essentiel de fournir \u00e0 l\u2019enfant une quantit\u00e9 ad\u00e9quate de prot\u00e9ines pour lui en assurer une bonne r\u00e9serve, tout en contribuant au rendement efficace de plusieurs fonctions de son organisme. Cet apport est aussi n\u00e9cessaire au d\u00e9veloppement et \u00e0 la croissance\u00a0:<\/p>\n<ul>\n<li>du cerveau<\/li>\n<li>du syst\u00e8me immunitaire<\/li>\n<li>des muscles<\/li>\n<li>du collag\u00e8ne<\/li>\n<li>des cheveux<\/li>\n<\/ul>\n<p>Pour maximiser le potentiel de croissance, la source prot\u00e9inique est un autre facteur tr\u00e8s important.<\/p>\n<p>Une m\u00e9ta-analyse de 2012 rapportait que la taille des enfants consommant des produits laitiers \u00e9tait sup\u00e9rieure \u00e0 celle des enfants qui n\u2019en consommaient pas. D\u2019autres \u00e9tudes publi\u00e9es indiquaient que les prot\u00e9ines du lait de vache (c.-\u00e0-d. cas\u00e9ine et lactos\u00e9rum) et le facteur de croissance\u00a01 semblable \u00e0 l\u2019insuline (IGF-1) contribuent \u00e0 une plus forte croissance lin\u00e9aire (taille).<\/p>\n<p>Une \u00e9tude r\u00e9cente parue dans le <em>American Journal of Clinical Nutrition<\/em> s\u2019est attard\u00e9e sur le lien entre la taille de l\u2019enfant et le type de lait ing\u00e9r\u00e9. L\u2019\u00e9tude regroupait 5\u00a0020 enfants en sant\u00e9 \u00e2g\u00e9s de 24 \u00e0 72 mois (2 \u00e0 6 ans) et r\u00e9sidant \u00e0 Toronto, au Canada.<\/p>\n<p>Un questionnaire a permis de collecter les donn\u00e9es suivantes\u00a0: \u00e2ge, sexe, IMC (en kg par m2), cote Z, origine ethnique maternelle, revenu et taille de la m\u00e8re. Le revenu par quartier servait \u00e0 d\u00e9terminer le statut socio\u00e9conomique. Les chercheurs ont aussi analys\u00e9 le volume quotidien de lait, provenant ou non de la vache.<\/p>\n<p>Les r\u00e9sultats associaient la taille de l\u2019enfant et le type de lait ing\u00e9r\u00e9, d\u00e9pendamment de la quantit\u00e9 consomm\u00e9e. Aucune donn\u00e9e significative sur le plan statistique n\u2019appuyait l\u2019hypoth\u00e8se que la consommation de lait ne provenant pas de la vache am\u00e9liorait la taille de l\u2019enfant. Au contraire, ce type de lait \u00e9tait associ\u00e9 \u00e0 un gain de taille inf\u00e9rieur chez l\u2019enfant.<\/p>\n<p>On a pu lier la consommation d\u2019une tasse de lait autre que de vache \u00e0 une stature plus courte de 0,4\u00a0cm en moyenne. Fait int\u00e9ressant, les enfants de 3 ans qui consommaient trois tasses de lait autre que de vache \u00e9taient d\u2019une taille inf\u00e9rieure d\u2019environ 1,5\u00a0cm \u00e0 celle des enfants buvant la m\u00eame quantit\u00e9 de lait de vache.<\/p>\n<p>Il faudra poursuivre les recherches pour comprendre la relation causale entre consommation de lait autre que de vache et taille de l\u2019enfant. Cette \u00e9tude laisse entendre qu\u2019il est important de songer au meilleur type de lait \u00e0 faire boire aux enfants.<\/p>\n<p>Une explication possible de ces r\u00e9sultats tiendrait aux diff\u00e9rences de contenu nutritionnel (calories [\u00e9nergie], prot\u00e9ines, lipides et min\u00e9raux). Par exemple, deux tasses de lait de vache fournissent 16\u00a0g de prot\u00e9ines, soit l\u2019\u00e9quivalent de 70\u00a0% de l\u2019apport quotidien en prot\u00e9ines recommand\u00e9 pour un enfant de trois ans. La m\u00eame quantit\u00e9 de lait d\u2019amande n\u2019en procure que 4 grammes ou 25\u00a0% seulement.<\/p>\n<p>Que faut-il en conclure?<\/p>\n<p>Il est particuli\u00e8rement important de lire et comparer les \u00e9tiquettes dans le cas d\u2019un enfant qui suit un r\u00e9gime v\u00e9g\u00e9talien ou v\u00e9g\u00e9tarien, ou qui est allergique aux substances laiti\u00e8res.
