Dans la s\u00e9rie 1, les repas ont \u00e9t\u00e9 consomm\u00e9s au petit-d\u00e9jeuner, suivi d\u2019une analyse des taux de glyc\u00e9mie apr\u00e8s un petit-d\u00e9jeuner exp\u00e9rimental, un d\u00e9jeuner normal et un d\u00eener normal. Dans la s\u00e9rie 2, les participants ont consomm\u00e9 un d\u00eener exp\u00e9rimental le soir et leurs taux de glucose dans le sang ont \u00e9t\u00e9 mesur\u00e9s apr\u00e8s le petit-d\u00e9jeuner normal du lendemain matin.<\/p>\n<p>Les petits-d\u00e9jeuners comportant des c\u00e9r\u00e9ales \u00e0 faible indice glyc\u00e9mique (comme l&#8217;orge ou le grain de seigle) ont fait baisser le taux de glyc\u00e9mie au petit-d\u00e9jeuner, au d\u00e9jeuner suivant, et cumulativement tout au long de la journ\u00e9e (petit-d\u00e9jeuner + d\u00e9jeuner + diner) par rapport au pain blanc.
