Dans un groupe de personnes volontaires en bonne sant\u00e9, les r\u00e9ponses glyc\u00e9miques, insuliniques et leptiques \u00e0 deux diff\u00e9rentes c\u00e9r\u00e9ales pour petit-d\u00e9jeuner ont \u00e9t\u00e9 mesur\u00e9es. La leptine est une hormone produite par les cellules adipeuses qui communiquent le degr\u00e9 d\u2019app\u00e9tit \u00e0 l\u2019hypothalamus situ\u00e9e dans le cerveau. \u00a0Les niveaux de leptine \u00e9lev\u00e9s provoquent une sensation de sati\u00e9t\u00e9 et r\u00e9duit la faim.<\/p>\n<p>Des repas comptant une charge de 50 g de glucides disponibles provenant de flocons de ma\u00efs Corn Flakes (de Kellog\u2019s) ou de Fiber One (de General Mills) ont \u00e9t\u00e9 servis \u00e0 deux reprises, en ordre al\u00e9atoire, apr\u00e8s un jeune de nuit de 12 heures. Des \u00e9chantillons de sang ont \u00e9t\u00e9 pr\u00e9lev\u00e9s au repos, et ensuite 30, 60, 90 et 120 minutes apr\u00e8s avoir mang\u00e9. L\u2019IG a \u00e9t\u00e9 calcul\u00e9 \u00e0 partir de la r\u00e9ponse du glucose au repas t\u00e9moin, normalis\u00e9 par rapport \u00e0 une charge de glucose de 50 g administr\u00e9e par voie orale de 50 g.<\/p>\n<p>L\u2019IG moyen pour les Corn Flakes \u00e9tait 125, et 49 pour Fibre One. Ces repas ont \u00e9t\u00e9 class\u00e9s comme ayant un IG \u00e9lev\u00e9 et un IG faible respectivement, et pr\u00e9sentaient une diff\u00e9rence consid\u00e9rable. La r\u00e9ponse insulinique suite au repas hypoglyc\u00e9mique a \u00e9t\u00e9 nettement r\u00e9duite par rapport au repas hyper glyc\u00e9mique.
