En un grupo de voluntarios saludables, se midieron las respuestas ante la glucosa, la insulina y la leptina en dos cereales de desayuno contrastantes. La leptina es una hormona producida por las c\u00e9lulas grasas que comunican el nivel de apetito al hipot\u00e1lamo. Los niveles de leptina muy altos activan una sensaci\u00f3n de plenitud, y disminuyen la sensaci\u00f3n de hambre.<\/p>\n<p>Se dieron dos comidas en dos momentos aleatorios despu\u00e9s de 12 horas de ayuno nocturno, y consist\u00edan en 50 gramos de un carbohidrato disponible en el cereal Corn Flakes (marca Kellog\u00b4s) o en el de Fiber One (marca General Mills). Las muestras de sangre se tomaron en reposo y a los 30, 60, 90 y 120 minutos despu\u00e9s de comer. La glicemia (GI) fue calculada teniendo en cuenta la respuesta de la glucosa al alimento que se examin\u00f3, normalizado ante 50 gramos de carga oral de glucosa.<\/p>\n<p>El promedio de nivel de glucosa para Corn Flakes fue de 125 y de 49 para Fiber One. Estos alimentos fueron clasificados como de alto nivel y bajo nivel de glucosa respectivamente y resultaron considerablemente diferentes el uno del otro. La reacci\u00f3n de la insulina despu\u00e9s de un alimento de bajo nivel de glucosa se redujo de manera notable comparado con un alimento de alto nivel.
